1 cup Biscoff cookie butter (smooth for best texture)
1 cup crushed Biscoff cookies (about 10–12 cookies, more for rolling if you like)
¾ cup cream cheese (softened)
1 ½ cups semi-sweet chocolate chips (or dark chocolate if preferred)
1 teaspoon vanilla extract
Pinch of salt
Optional topping: extra crushed Biscoff cookies or sprinkles
Instructions
In a large mixing bowl, combine the Biscoff cookie butter, cream cheese, crushed Biscoff cookies, vanilla extract, and the pinch of salt. Mix until smooth and creamy.
Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
Once chilled, scoop small portions (about 1 tablespoon each) and roll into balls. Place them on a parchment-lined baking sheet.
Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.
Dip each truffle into the melted chocolate, allowing excess to drip off. Roll in crushed Biscoff cookies or sprinkles if desired.
Return the dipped truffles to the baking sheet and refrigerate for 30 minutes until chocolate hardens.
