Ingredients
1 cup heavy whipping cream chilled
¼ cup sugar
8 ounces mascarpone cheese
⅓–½ cup Biscoff cookie butter use ½ cup for prominent biscoff flavor
1 teaspoon vanilla extract
1 cup strong coffee
32–50 Biscoff cookies 30-32 for dessert cups; 48-50 for baking dish
1–2 tablespoons cocoa powder for dusting
Instructions
- In a large bowl, whip the heavy cream and sugar until soft peaks form.
- In another bowl, mix the mascarpone cheese, Biscoff cookie butter, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip the Biscoff cookies in the strong coffee quickly, then layer them at the bottom of a serving dish or dessert cups.
- Spread a layer of the mascarpone mixture over the cookies, then repeat the layers until all ingredients are used, finishing with the mascarpone mixture.
- Dust the top with cocoa powder and refrigerate for at least 4 hours, preferably overnight.
Notes
For an enhanced Biscoff flavor, use the full ½ cup of cookie butter. For a quicker option, individual serving cups can be made instead of a larger dish.
