1 tablespoon Shaoxing wine (or dry sherry)

1 tablespoon cornstarch

1/2 cup chicken broth

2 tablespoons light soy sauce (or soy sauce)

2 tablespoons Shaoxing wine (or dry sherry)

2 teaspoons dark soy sauce (or soy sauce)

1 tablespoon cornstarch

1 1/2 tablespoons sugar

2 teaspoons coarsely ground black pepper

1/8 teaspoon salt

2 tablespoons peanut oil (or vegetable oil)

1 tablespoon minced ginger

2 cloves garlic

minced

1/2 white onion

chopped

2 bell peppers

chopped (mixed)


Instructions

  • In a bowl, marinate chicken pieces with light soy sauce, Shaoxing wine, and cornstarch for about 15 minutes.
  • In another bowl, mix chicken broth, light soy sauce, Shaoxing wine, dark soy sauce, cornstarch, sugar, black pepper, and salt to create the sauce.
  • Heat peanut oil in a large skillet or wok over medium-high heat.
  • Add minced ginger, garlic, and onions; stir-fry for about 2 minutes until fragrant.
  • Add the marinated chicken to the skillet and cook for 5-7 minutes until browned and cooked through.
  • Add the chopped bell peppers and stir-fry for an additional 2-3 minutes.
  • Pour the sauce over the chicken and vegetables; cook for another 2-3 minutes, stirring until the sauce thickens.
  • Serve hot with steamed rice or noodles.

Notes

Feel free to adjust the amount of black pepper according to your taste preference. You can also add other vegetables like broccoli or carrots for more variety.
