Ingredients
5 cups blackberries
3/4 cup sugar
3 tablespoons instant tapioca (or cornstarch)
juice of 1 lemon
2 cups all purpose flour
3 teaspoons baking powder
1 cup of fresh sweet corn
mashed up a bit with a fork
1 teaspoon salt
4 oz unsalted butter
cold and cut into small chunks
1/2 cup whole milk
1 egg yolk
coarse sugar for sprinkling
Ice Cream or Whipped Cream for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine blackberries, sugar, tapioca, and lemon juice. Set aside to marinate.
- In another bowl, mix the flour, baking powder, salt, and sweet corn.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk and egg yolk until just combined.
- Pour the blackberry mixture into a baking dish and drop spoonfuls of the biscuit dough on top.
- Sprinkle coarse sugar on the biscuit dough.
- Bake for 30 minutes or until the biscuits are golden brown and the filling is bubbly.
- Serve warm with ice cream or whipped cream.
Notes
For best results, use fresh blackberries. Adjust sugar based on the sweetness of the blackberries.
