1 teaspoon salt

4 oz unsalted butter

cold and cut into small chunks

1/2 cup whole milk

1 egg yolk

coarse sugar for sprinkling

Ice Cream or Whipped Cream for serving


Instructions

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine blackberries, sugar, tapioca, and lemon juice. Set aside to marinate.
  • In another bowl, mix the flour, baking powder, salt, and sweet corn.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the milk and egg yolk until just combined.
  • Pour the blackberry mixture into a baking dish and drop spoonfuls of the biscuit dough on top.
  • Sprinkle coarse sugar on the biscuit dough.
  • Bake for 30 minutes or until the biscuits are golden brown and the filling is bubbly.
