Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, at room temperature
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 cup fresh blackberries
  • 1 cup fresh raspberries
  • ½ cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ¼ cup water

  • Instructions

  • Preheat your oven to 325°F (162°C).
  • In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Bake the crust for 10-12 minutes until set and lightly golden.
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the sugar and mix until well combined.
  • With the mixer on low, add the eggs one at a time, mixing just until combined.
  • Add the sour cream, vanilla extract, and flour; mix until just incorporated.
  • Once the crust has cooled slightly, pour the cheesecake filling over the crust, smoothing the top with a spatula.
  • Bake in the preheated oven for about 50-60 minutes or until the center is set but still slightly jiggly.
  • Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour.
  • Once cooled, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.
