Ingredients
Scale
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
3 (8-ounce) packages cream cheese, softened to room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs, at room temperature
1 cup sour cream
2 tablespoons all-purpose flour
1 cup fresh blackberries
1 cup fresh raspberries
½ cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
¼ cup water
Instructions
Preheat your oven to 325°F (162°C).
In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust for 10-12 minutes until set and lightly golden.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the sugar and mix until well combined.
With the mixer on low, add the eggs one at a time, mixing just until combined.
Add the sour cream, vanilla extract, and flour; mix until just incorporated.
Once the crust has cooled slightly, pour the cheesecake filling over the crust, smoothing the top with a spatula.
Bake in the preheated oven for about 50-60 minutes or until the center is set but still slightly jiggly.
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour.
Once cooled, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.
