1 cup of buttermilk
½ cup of vegetable oil
2 large eggs
1 teaspoon of vanilla extract
1 cup of fresh blackberries, pureed
1 cup of unsalted butter, softened
4 cups of powdered sugar
½ cup of blackberry puree
1 teaspoon of vanilla extract
Pinch of salt
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract. Pour this mixture into the dry ingredients, mixing just until combined.
Gradually fold in the blackberry puree.
Pour the batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pans for about 10 minutes before gently transferring to a wire rack to cool completely.
Beat together the softened butter and powdered sugar on low speed until blended, then mix in the blackberry puree, vanilla, and a pinch of salt. Whip until light and fluffy.
Once the cakes have cooled, place one layer on a serving plate, frost the top, then place the second layer on top and frost the top and sides.
Garnish with fresh blackberries and enjoy!
