  • 2 large eggs

  • 1 cup of fresh blackberries, pureed
  • 1 cup of unsalted butter, softened
  • 4 cups of powdered sugar
  • ½ cup of blackberry puree
  • 1 teaspoon of vanilla extract
  • Pinch of salt

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  • In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract. Pour this mixture into the dry ingredients, mixing just until combined.
  • Gradually fold in the blackberry puree.
  • Pour the batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in the pans for about 10 minutes before gently transferring to a wire rack to cool completely.
  • Beat together the softened butter and powdered sugar on low speed until blended, then mix in the blackberry puree, vanilla, and a pinch of salt. Whip until light and fluffy.
  • Once the cakes have cooled, place one layer on a serving plate, frost the top, then place the second layer on top and frost the top and sides.
  • Garnish with fresh blackberries and enjoy!
