Ingredients
Scale
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
Salt and pepper, to taste
4 large flour tortillas
2 cups romaine lettuce, chopped
½ cup Caesar dressing
½ cup grated Parmesan cheese
Croutons, for added crunch
Fresh lemon wedges, for serving
Instructions
In a bowl, combine the shrimp with olive oil and all the spices (paprika, garlic powder, onion powder, cayenne, oregano, salt, and pepper). Toss to coat evenly.
Preheat a large skillet over medium-high heat.
Add the shrimp in a single layer, being careful not to overcrowd the pan. Cook for about 2-3 minutes on each side until they’re pink and opaque.
In a separate bowl, combine the chopped romaine lettuce with the Caesar dressing, tossing to coat.
Lay a tortilla flat and fill it with a generous scoop of the dressed romaine. Top with the blackened shrimp and a sprinkle of Parmesan cheese and croutons if desired.
Wrap it up like a burrito. Optionally, place the wrapped tortilla back in the skillet briefly to crisp up the outside.
Serve with fresh lemon wedges.
