Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- In a bowl, mix rolled oats, all-purpose flour, light brown sugar, ground cinnamon, and salt for the crust.
- Melt the unsalted butter and combine it with the dry ingredients until crumbly. Press half of this mixture into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then set it aside to cool slightly.
- In another bowl, beat cream cheese and granulated white sugar until smooth and creamy. Add the egg and vanilla extract, mixing until combined.
- Spread the cream cheese mixture over the baked crust.
- In a saucepan, combine fresh blueberries, cornstarch, and freshly squeezed lemon juice, cooking over medium heat until the blueberries soften and the mixture thickens.
- Pour the blueberry mixture over the cheesecake layer, then sprinkle the remaining oat mixture on top.
- Return to the oven and bake for an additional 20 minutes until the topping is golden brown.
- Allow the bars to cool completely before slicing and serving.
