For the Crust & Crumble:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ tsp baking powder
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

For the Blueberry Filling:

  • 2 cups fresh or frozen blueberries
  • ⅓ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  • In a bowl, mix flour, sugar, baking powder, melted butter, and vanilla until crumbly.
  • Press half the mixture into the baking dish to form the crust.
  • In another bowl, toss blueberries with sugar, cornstarch, and lemon juice. Spread over the crust.
  • Sprinkle remaining crumble mixture on top.
  • Bake for 35-40 minutes until golden brown. Let cool before slicing.
