For the Crust & Crumble:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ tsp baking powder
- ½ cup unsalted butter, melted
- 1 tsp vanilla extract
For the Blueberry Filling:
- 2 cups fresh or frozen blueberries
- ⅓ cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix flour, sugar, baking powder, melted butter, and vanilla until crumbly.
- Press half the mixture into the baking dish to form the crust.
- In another bowl, toss blueberries with sugar, cornstarch, and lemon juice. Spread over the crust.
- Sprinkle remaining crumble mixture on top.
- Bake for 35-40 minutes until golden brown. Let cool before slicing.
Notes
- Swap blueberries for raspberries or mixed berries.
- Serve warm with vanilla ice cream for extra indulgence.
