Description
This Blueberry Lavender Pie blends juicy blueberries with a subtle floral hint of lavender inside a flaky buttery crust. It’s a perfect, elegant dessert for summer gatherings.
Ingredients
1 pie crust (store-bought or homemade)
4 cups fresh blueberries
3/4 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon dried culinary lavender, crushed
1 tablespoon lemon juice
1/4 teaspoon salt
1 egg, beaten (for egg wash)
2 tablespoons coarse sugar (optional, for topping)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, mix blueberries, sugar, cornstarch, crushed lavender, lemon juice, and salt until well combined.
3. Place pie crust into a 9-inch pie pan. Pour blueberry mixture into the crust.
4. Cover with a top crust or lattice. Brush with beaten egg and sprinkle coarse sugar if desired.
5. Bake for 45–50 minutes until crust is golden and filling bubbles.
6. Cool completely before serving to allow filling to set.
Notes
Use fresh lavender specifically labeled for cooking.
Add a scoop of vanilla ice cream for serving.
Substitute blackberries or mixed berries if preferred.
