Blueberry Oatmeal Bars combine wholesome oats and juicy blueberries into a healthy, flavorful snack perfect for any time of day.


Ingredients

• 1 1/2 cups rolled oats

• 1 cup whole wheat flour

• 1/2 cup brown sugar

• 1/2 tsp baking powder

• 1/4 tsp salt

• 1/2 cup unsweetened applesauce

• 1/4 cup honey

• 1/4 cup coconut oil, melted

• 1 tsp vanilla extract

• 1 1/2 cups fresh or frozen blueberries


Instructions

1. Preheat oven to 350°F (175°C).

2. Line an 8×8-inch baking pan with parchment paper.

3. In a large bowl, mix oats, flour, brown sugar, baking powder, and salt.

4. In another bowl, whisk applesauce, honey, coconut oil, and vanilla.

5. Combine wet ingredients with dry ingredients and stir gently.

6. Fold in blueberries carefully to avoid breaking them.

7. Press half of the mixture into the prepared pan evenly.

8. Spread blueberries evenly over the base.

9. Sprinkle remaining oat mixture on top, pressing lightly.

10. Bake for 35-40 minutes until golden and firm.

11. Cool completely before cutting into bars.

Notes

Use frozen blueberries if fresh are not available; no need to thaw.

Store bars in an airtight container at room temperature for up to 4 days or freeze for longer storage.
