2 cups of fresh blueberries (about 400g, washed and stemmed)
2 cups of fresh peaches (about 400g, peeled and diced)
1 cup of granulated sugar (adjust to taste)
Juice of 1 lemon (freshly squeezed)
1 vanilla bean (or 1 teaspoon of pure vanilla extract)
1/4 teaspoon of salt
1 tablespoon of powdered pectin (optional)
Instructions
Prepare your ingredients: Measure and wash your blueberries and peaches, and peel and dice the peaches if using fresh ones.
Combine the fruit in a saucepan: Add the blueberries, peaches, sugar, lemon juice, and salt. Stir gently to combine.
Slash the vanilla bean: Cut the vanilla bean down the middle and scrape out the seeds. Add both the seeds and the whole pod to the fruit mixture.
Cook it up: Place the saucepan over medium heat and bring to a simmer, stirring occasionally. Cook for about 10-15 minutes until the fruit breaks down.
Add the pectin: If using powdered pectin, sprinkle it in now and stir well. Simmer for another 5-10 minutes until the jammers reach your desired thickness.
Remove and cool: Take the pot off heat and remove the vanilla bean pod if used.
Jar it up: Ladle the hot jam into sterilized jars, leaving some room at the top. Let cool before sealing.
