  • 1 tablespoon of cornstarch
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of lemon juice
  • 1 cup of rolled oats
  • 1 cup of all-purpose flour
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/2 cup of unsalted butter, melted
  • Pinch of salt

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the blueberries and chopped rhubarb. Sprinkle in the granulated sugar, cornstarch, vanilla extract, and lemon juice. Mix gently until the fruit is evenly coated. Set aside.
  • In another bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt.
  • Pour the melted butter over the dry mixture and stir until the mixture is crumbly.
  • Transfer the fruit mixture into a greased 9×13-inch baking dish. Spread it out evenly and sprinkle the oat topping over the fruit.
  • Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the fruit is bubbling.
  • Once baked, let the crisp cool for about 10 minutes.
