1 cup of orzo pasta
2 cups of vegetable or chicken broth
8 oz of Boursin cheese (any flavor)
½ cup of freshly grated Parmesan cheese
2 cups of fresh spinach
1 cup of cherry tomatoes, halved
2 cloves of garlic, minced
1 tablespoon of olive oil
Salt and pepper to taste
Fresh herbs for garnish (such as basil or parsley, optional)
Instructions
Preheat your oven to 400°F (200°C).
In a medium pot, bring the broth to a boil. Add the orzo and reduce to a simmer. Cook for about 8-10 minutes until the orzo is al dente. Stir occasionally to avoid sticking.
While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and spinach, season with a pinch of salt and pepper, and cook until the spinach wilts and the tomatoes soften, about 3-4 minutes.
Once the orzo is cooked, drain any excess broth (leave a little for creaminess). In the skillet with the veggies, add the cooked orzo and the Boursin cheese. Stir until the cheese is melted and everything is well combined.
Sprinkle in half of the Parmesan cheese, mixing it in for extra flavor. Check for seasoning and adjust with salt and pepper as needed.
Pour the mixture into a greased baking dish. Spread it out evenly and sprinkle the remaining Parmesan cheese on top.
Bake for about 20-25 minutes or until the top is bubbly and golden brown.
Once it’s out of the oven, let it cool for a few minutes. Garnish with fresh herbs, if you like, and serve warm.
