Ingredients
Scale
12 ounces of bow tie pasta
1 cup of cherry tomatoes, halved
1 cup of diced cucumber (English cucumber adds a refreshing crunch)
1 cup of diced bell peppers (red, yellow, or green)
1 cup of canned chickpeas, drained and rinsed
1/2 cup of finely chopped red onion (soak in cold water for a milder flavor)
1/2 cup of sliced black olives
1/3 cup of chopped fresh parsley (or basil for a different flavor profile)
1/2 cup of crumbled feta cheese (optional but highly recommended)
1/2 cup of olive oil
1/4 cup of red wine vinegar
2 tablespoons of Dijon mustard
Salt and pepper to taste
Instructions
Cook the pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Add the bow tie pasta and cook according to package instructions, usually about 10-12 minutes. Drain and rinse under cold water to stop the cooking process.
Prepare the veggies: While the pasta is cooking, chop your tomatoes, cucumber, peppers, and onion. Drizzle a little olive oil over the veggies to keep them fresh.
Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper. Taste it and adjust the seasoning if you like it a bit tangier or saltier.
Combine: In a large mixing bowl, combine the cooled pasta, all the veggies, chickpeas, olives, and feta cheese. Pour the dressing over the top and toss gently to mix.
Chill: For the best flavor, let your salad sit in the refrigerator for at least 30 minutes to allow the flavors to mingle and develop.
