1 large head of green cabbage, chopped into wedges
1 large onion, thinly sliced
2 tablespoons olive oil or butter
4 cloves of garlic, minced
1 cup vegetable or chicken broth
2 tablespoons apple cider vinegar
1 tablespoon sugar
Salt and pepper to taste
Optional: 1 teaspoon caraway seeds
Remove the outer leaves of the cabbage and cut it into wedges.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and sauté until translucent, about 5 minutes.
Stir in the minced garlic and sauté for another minute until fragrant.
Gently add the cabbage wedges to the pot, layering them over the onions and garlic.
Add the vegetable or chicken broth, vinegar, and sugar. Season with salt and pepper to taste.
Bring to a boil, then lower heat and cover. Let it simmer for about 30-40 minutes until the cabbage is tender.
Taste and adjust seasoning. If desired, add caraway seeds in the last few minutes of cooking.
