4 lamb shanks (about 1 pound each)
2 tablespoons of olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cloves of garlic, minced
1 cup of red wine
2 cups of beef or chicken stock
2 tablespoons of tomato paste
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
Salt and pepper to taste
Optional: fresh herbs for garnish
Instructions
Preheat your oven to 325°F (165°C).
In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the lamb shanks and sear them until brown, about 4-5 minutes per side.
Remove the lamb shanks and set them aside. In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until softened.
Add the minced garlic and cook for another minute.
Pour in the red wine to deglaze the pot, scraping up any brown bits. Let it simmer for 2-3 minutes.
Stir in the beef or chicken stock, tomato paste, dried thyme, and dried rosemary. Bring to a gentle boil.
Return the lamb shanks to the pot to bask in the sauce.
Cover the pot and place it in the preheated oven. Let it braise for about 2.5 to 3 hours until the meat is tender.
Once done, let it rest for a few minutes before serving. Reduce the sauce on the stovetop if desired and garnish with fresh herbs.
