  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves of garlic, minced
  • 1 cup of red wine
  • 2 cups of beef or chicken stock
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

  • Instructions

  • Preheat your oven to 325°F (165°C).
  • In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the lamb shanks and sear them until brown, about 4-5 minutes per side.
  • Remove the lamb shanks and set them aside. In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until softened.
  • Add the minced garlic and cook for another minute.
  • Pour in the red wine to deglaze the pot, scraping up any brown bits. Let it simmer for 2-3 minutes.
  • Stir in the beef or chicken stock, tomato paste, dried thyme, and dried rosemary. Bring to a gentle boil.
  • Return the lamb shanks to the pot to bask in the sauce.
  • Cover the pot and place it in the preheated oven. Let it braise for about 2.5 to 3 hours until the meat is tender.
  • Once done, let it rest for a few minutes before serving. Reduce the sauce on the stovetop if desired and garnish with fresh herbs.
