1½ cups dark cocoa powder

1 tablespoon baking soda

5 large eggs room temperature

2 cups milk room temperature

1 cup plain Greek yogurt room temperature

1 cup water

1 tablespoon pure vanilla extract

¾ cup unsalted butter melted

2 cups unsalted butter room temperature

4 cups powdered sugar

1 cup dark cocoa powder

2 teaspoons pure vanilla extract

½ teaspoon kosher salt

½ cup heavy cream room temperature


Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together the flour, granulated sugar, brown sugar, dark cocoa powder, baking soda, baking powder, and kosher salt.
  • In another bowl, whisk together the eggs, milk, Greek yogurt, water, vanilla extract, and melted butter.
  • Combine the wet ingredients with the dry ingredients and mix until just combined.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to wire racks.
  • For the frosting, beat the room temperature unsalted butter until creamy. Gradually add the powdered sugar and dark cocoa powder, mixing until smooth.
  • Stir in the vanilla extract, kosher salt, and heavy cream until the frosting is light and fluffy.
  • Once the cakes are completely cool, place one layer on a cake stand or plate. Spread a generous amount of frosting on top, then add the second layer and frost the top and sides of the cake.
  • Serve immediately or refrigerate until ready to serve.
