Ingredients

1 cup unsalted butter
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
— Cheesecake Layer —
16 oz (450g) cream cheese, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. Brown the butter in a saucepan over medium heat, stirring constantly, until golden and fragrant. Remove from heat and let cool slightly.
3. In a large bowl, combine browned butter, brown sugar, and granulated sugar. Beat until smooth.
4. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
5. In another bowl, whisk flour, baking soda, and salt.
6. Gradually add dry ingredients to wet mixture and mix until combined.
7. Fold in chocolate chips.
8. Press about two-thirds of cookie dough evenly into the prepared pan.
9. In a separate bowl, beat cream cheese and sugar until smooth.
10. Add eggs one at a time, beating well after each addition. Stir in vanilla.
11. Pour cheesecake layer over the cookie dough base.
12. Drop remaining cookie dough by spoonfuls over the cheesecake layer and gently spread to cover.
13. Bake for 40-45 minutes, until cheesecake is set and cookie dough is golden.
14. Cool completely, then refrigerate for at least 3 hours before cutting into bars.
Notes
Use good-quality chocolate chips for best flavor.
Do not overbake; cheesecake should be set but still creamy.
Store bars refrigerated in an airtight container.
