Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 4 eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
For the Peach Filling:
- 2 cups fresh or canned peaches, diced
- ½ cup sugar
- 1 tbsp cornstarch
- ½ tsp cinnamon
- 1 tbsp lemon juice
For the Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup heavy cream
- 1 tsp vanilla extract
Instructions
1️⃣ Preheat oven to 350°F (175°C) and grease three 8-inch cake pans.
2️⃣ Make the cake batter: Cream butter and sugars, then beat in eggs and vanilla. Mix in dry ingredients alternately with buttermilk.
3️⃣ Bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
4️⃣ Prepare peach filling: Cook peaches, sugar, cornstarch, and cinnamon over medium heat until thickened. Let cool.
5️⃣ Make the frosting: Beat butter, powdered sugar, vanilla, and cream until smooth.
6️⃣ Assemble the cake: Layer cake with peach filling and frost the outside.
