These Brownie Ice Cream Sandwiches pair rich, fudgy brownie layers with creamy vanilla ice cream for the ultimate frozen treat. Perfect for summer or anytime you crave a sweet indulgence.
Ingredients
— Brownie Layer —
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
— Filling —
1 pint (2 cups) vanilla ice cream, softened slightly
(Optional) Sprinkles, mini chocolate chips, or crushed cookies for edges
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides.
2. In a large bowl, mix melted butter and sugar. Add eggs and vanilla; whisk until smooth.
3. Stir in cocoa powder, flour, salt, and baking powder. Mix just until combined.
4. Spread batter evenly in prepared pan and bake for 15–18 minutes. Do not overbake. Let cool completely.
5. Lift brownies from pan using parchment. Cut in half crosswise to make two equal pieces.
6. Spread softened ice cream over one half. Top with the second half to form a sandwich.
7. Wrap tightly in plastic wrap and freeze for 2–3 hours, or until firm.
8. Cut into squares. Roll edges in sprinkles or chips if desired. Serve frozen.
Notes
Use any ice cream flavor you like—chocolate, mint chip, or strawberry work great.
For cleaner cuts, dip knife in hot water before slicing.
Store in airtight container in the freezer for up to one week.
