1 pound Brussels sprouts, trimmed and halved
2 tablespoons olive oil
Salt and pepper, to taste
2 cups heavy cream
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 cup grated Gruyère cheese
1/2 cup breadcrumbs
Fresh thyme, for garnish (optional)
Preheat your oven to 375°F (190°C).
Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry.
Toss the cabbage halves in a bowl with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
In a saucepan, combine heavy cream, minced garlic, and Dijon mustard over medium heat until warm. Stir in 3/4 cup of cheese until melted.
Combine roasted Brussels sprouts in a baking dish and pour creamy cheese sauce over them.
Mix remaining breadcrumbs with 1/4 cup of cheese and sprinkle over the top.
