2 cups cooked shredded chicken (leftover rotisserie works great!)
1/2 cup buffalo wing sauce (or to taste)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4 large flour tortillas (or whole wheat if you prefer)
1 tablespoon olive oil or butter, for frying
Optional garnishes: sliced green onions, sour cream, or blue cheese dressing
Instructions
In a large bowl, mix together your shredded chicken and buffalo sauce.
Sprinkle the cheddar and mozzarella cheeses into the same bowl with the chicken.
In a large skillet, melt your olive oil or butter over medium heat.
Lay a tortilla flat on a clean surface. Spread a generous amount of the chicken-cheese mixture on one half of the tortilla and fold the other half over.
Place the folded quesadilla in the hot skillet and cook for about 2-3 minutes on one side until golden brown, then flip and cook the other side.
Once crispy and the cheese is melted, let it cool for a minute before slicing into wedges and serve with your favorite toppings.
