Ingredients
1 pound boneless chicken breasts – cut into 1 inch pieces
1 tablespoon olive oil
1/2 cup Frank’s RedHot Sauce
1/2 teaspoon garlic powder
1 tablespoons butter
1/2 teaspoon salt
6 cups Romaine – chopped
1 cup celery – chopped
1 carrot grated
1/2 cup bleu cheese crumbles
Ranch or Bleu Cheese Dressing
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the chicken pieces with olive oil, Frank’s RedHot Sauce, garlic powder, butter, and salt.
- Spread the chicken mixture on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through.
- While the chicken is baking, prepare your salad by combining chopped Romaine, celery, grated carrot, and bleu cheese crumbles in a large bowl.
- Once the chicken is done, let it cool slightly and then add it to the salad mix.
- Drizzle with Ranch or Bleu Cheese Dressing and toss gently to combine.

Notes
You can adjust the level of spiciness by varying the amount of Frank’s RedHot Sauce. For a cooler option, use ranch dressing instead of bleu cheese.
