1 pound of boneless, skinless chicken breasts
1 tablespoon of olive oil
1 medium onion, diced
2 cloves of garlic, minced
1 can (10.5 oz) of cream of chicken soup
2 cups of chicken broth
1 cup of buffalo wing sauce
1 cup of heavy cream
1 teaspoon of cumin
Salt and pepper, to taste
Chopped green onions or parsley for garnish
Optional toppings: shredded cheese, sour cream, or croutons
Instructions
In a large pot over medium heat, add the olive oil. Once hot, add the chicken breasts. Season with salt and pepper. Cook for about 5-7 minutes on each side until golden brown. Remove chicken and set aside.
In the same pot, add diced onions and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute.
Lower heat and stir in the cream of chicken soup and chicken broth. Mix until smooth and let simmer for a minute.
Stir in buffalo wing sauce and heavy cream. Season with cumin, salt, and pepper. Simmer for 5-10 minutes.
Shred the cooked chicken into bite-sized pieces and add back into the pot.
Allow soup to simmer for another 5 minutes, stirring occasionally.
Ladle soup into bowls and finish with chopped green onions or parsley and your favorite toppings.
