  • ½ cup unsalted butter
  • ¼ cup water
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp white pepper (or black pepper)
  • 1 tbsp fresh chives or parsley, chopped
  • Lemon wedges (for serving)

Instructions

1️⃣ Prepare the Lobster: Using kitchen scissors, cut along the top of the shell lengthwise. Gently lift the meat from the shell while keeping it attached at the base. Set aside.
2️⃣ Make the Butter Poaching Liquid: In a saucepan over low heat, combine butter and water, whisking until smooth and emulsified. Add garlic, lemon juice, salt, and pepper.
3️⃣ Poach the Lobster: Maintain the heat on low (the butter should not boil). Add the lobster tails and cook for 6-8 minutes, occasionally basting with the butter, until the lobster is opaque and tender.
4️⃣ Serve: Plate the lobster with a drizzle of the poaching butter and garnish with chives or parsley. Serve with lemon wedges and enjoy!
