Ingredients
4 catfish fillets
2 tablespoons olive oil
2 teaspoons Cajun seasoning
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
Salt and black pepper to taste
Lemon wedges for serving
Fresh parsley, chopped (optional garnish)
Instructions
1. Preheat the oven to 400°F (200°C).
2. Pat catfish fillets dry with paper towels.
3. In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, thyme, salt, and pepper.
4. Brush both sides of catfish with olive oil.
5. Sprinkle the seasoning mixture evenly over both sides of the fillets.
6. Place fillets on a baking sheet lined with parchment paper or lightly greased.
7. Bake for 12-15 minutes or until fish flakes easily with a fork.
8. Garnish with fresh parsley and serve with lemon wedges.
Notes
For extra crispiness, broil the catfish for the last 2 minutes.
