Ingredients
Scale
8 oz linguine or fettuccine pasta
1 tablespoon olive oil
1 onion, finely diced
3 cloves garlic, minced
1 bell pepper, chopped
1 cup cherry tomatoes, halved
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
½ teaspoon dried thyme
1 cup heavy cream
8 oz lump crab meat
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Juice of ½ lemon
Instructions
In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
In a large skillet over medium heat, add the olive oil. Once it's shimmering, toss in the diced onion and sauté for about 3-4 minutes until soft. Add the garlic and bell pepper, cooking until the bell pepper is tender.
Stir in the smoked paprika, cayenne pepper, and thyme. Let those spices mingle for about a minute until fragrant.
Pour in the heavy cream, stirring to combine. Bring everything to a gentle simmer, letting it thicken for about 3-5 minutes.
Gently fold in the crab meat and cherry tomatoes, and let it heat through for about 2 minutes. Then add your drained pasta, and toss everything together.
Sprinkle with salt and pepper to taste, and finish with a squeeze of lemon juice and a sprinkle of fresh parsley.
