  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 cup crispy bacon bits (optional)

Instructions

  • Bake the Potatoes: Preheat the oven to 400°F (200°C). Wash and dry the potatoes, then rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes until tender.
  • Scoop Out the Flesh: Let the potatoes cool slightly, then slice them in half lengthwise. Carefully scoop out the potato flesh into a mixing bowl, leaving a small border around the edges to keep the skins intact.
  • Mash the Potato Flesh: Mash the scooped-out potato with a fork or potato masher. Add melted butter, sour cream, milk, salt, and pepper, and mix until smooth and creamy.
  • Add Cheese and Toppings: Stir in half of the shredded cheddar cheese, green onions, and bacon bits (if using).
  • Fill the Potato Skins: Spoon the creamy mashed potato mixture back into the potato skins. Top with the remaining cheddar cheese.
  • Bake Again: Place the stuffed potatoes on a baking sheet and bake for another 15-20 minutes, until the cheese is melted and bubbly, and the potatoes are golden on top.
