2 tablespoons olive oil
1 large onion, diced
2 cloves fresh garlic, minced
1 bell pepper, diced
2 carrots, peeled and diced
4 medium potatoes, peeled and cubed
4 cups vegetable or chicken broth
1 cup heavy cream
1 tablespoon Cajun seasoning
Salt and pepper to taste
Chopped green onions for garnish
Your favorite toppings (bacon bits, shredded cheese, or croutons)
Instructions
In a large pot over medium heat, pour in the olive oil. Let it warm up for just a minute before tossing in the diced onion. Sauté until it becomes translucent, about 5 minutes.
Add the minced garlic, diced bell pepper, and carrots to the pot. Stir everything together and let it cook for about 3 minutes until the veggies are tender.
Add the cubed potatoes and stir again.
Pour in the broth and sprinkle in the Cajun seasoning. Bring the pot to a gentle boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are fork-tender.
Use a potato masher or immersion blender to carefully mash some of the potatoes.
Stir in the heavy cream, and season with salt and pepper to taste. Let it simmer for another 5 minutes.
Serve hot, garnished with chopped green onions and any other toppings you fancy.
