  • 2 carrots, peeled and diced
  • 4 medium potatoes, peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Your favorite toppings (bacon bits, shredded cheese, or croutons)

  • Instructions

  • In a large pot over medium heat, pour in the olive oil. Let it warm up for just a minute before tossing in the diced onion. Sauté until it becomes translucent, about 5 minutes.
  • Add the minced garlic, diced bell pepper, and carrots to the pot. Stir everything together and let it cook for about 3 minutes until the veggies are tender.
  • Add the cubed potatoes and stir again.
  • Pour in the broth and sprinkle in the Cajun seasoning. Bring the pot to a gentle boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are fork-tender.
  • Use a potato masher or immersion blender to carefully mash some of the potatoes.
