1 cup stone-ground grits
4 cups water or chicken broth
1 cup shredded sharp cheddar cheese
1/4 cup heavy cream or milk
Salt and pepper to taste
1 lb large shrimp, peeled and deveined
4 slices of bacon, chopped
1 bell pepper, diced (red or green, your choice)
1/2 onion, diced
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1 tablespoon Worcestershire sauce
2 tablespoons olive oil
Juice of half a lemon
Fresh parsley, chopped (for garnish)
Instructions
Gather all your ingredients and set them up near your cooking space.
In a pot, bring the water or broth to a boil. Once boiling, slowly whisk in the grits, reduce heat to low. Stir occasionally and let them simmer for about 20-25 minutes until creamy. Add cheese and cream at the end, seasoning with salt and pepper.
In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy, about 5-7 minutes. Remove bacon, leaving drippings in the pan.
In the same skillet, add diced bell pepper and onion. Sauté for about 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
Add shrimp to the skillet with Cajun seasoning, Worcestershire sauce, and lemon juice. Cook for 3-4 minutes until shrimp turn pink.
Serve grits in bowls topped with shrimp mixture, garnishing with crispy bacon and fresh parsley.
