1 tablespoon olive oil
1 medium onion, diced
3 cloves fresh garlic, minced
1 bell pepper, diced
2 cans (15 oz each) white beans, drained and rinsed
2 cups cooked chicken, shredded
2 cups chicken broth
1 can (4 oz) diced green chiles
2 teaspoons Cajun seasoning
1 teaspoon cumin
1 teaspoon smoked paprika
1 cup heavy cream
Salt and pepper, to taste
Fresh cilantro, for garnish
Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Cook until they soften, about 5-7 minutes.
Add the minced garlic and stir for about 1-2 minutes until fragrant.
Stir in the white beans and shredded chicken. Let them mingle with the veggies for a minute or two.
Add the chicken broth and diced green chiles. Give everything a hearty stir!
Sprinkle in the Cajun seasoning, cumin, and smoked paprika. Bring the mixture to a gentle boil.
