1 whole chicken (about 3–4 lbs), cut into parts
10 cups water
2 large carrots, sliced
2 medium potatoes, peeled and diced
1 medium onion, quartered
3 cloves fresh garlic, minced
1 ear of corn, cut into rounds
2 stalks celery, chopped
1/2 cup fresh cilantro, chopped
Salt and pepper to taste
1–2 limes, cut into wedges
Optional: Jalapeño slices for a kick, or avocado for creaminess!
Instructions
Prep your chicken: Rinse the chicken under cold water and pat it dry. Cut it into parts to help it cook faster.
Boil away: In a large pot, add the chicken and pour in the water. Bring it to a boil over medium-high heat and skim off any foam that forms.
Add the aromatics: Toss in the quartered onion, minced garlic, and a pinch of salt. Lower the heat and let it simmer for about 30 minutes.
Vegetable time: Add the carrots, potatoes, corn, and celery to the pot. Simmer for another 30-40 minutes until the chicken is cooked through and the veggies are tender.
Shred the chicken: Remove the chicken from the pot, let it cool, shred the meat, and discard the bones.
