1 sheet of puff pastry (thawed if frozen)
1 cup fresh mozzarella balls (bocconcini), halved
1 cup cherry tomatoes, halved
1/4 cup fresh basil leaves, chopped (plus more for garnish)
1/4 cup store-bought or homemade pesto
1 egg (for egg wash)
Salt and pepper to taste
(Optional) Balsamic glaze for drizzling
Preheat the oven to 400°F (200°C).
Lightly flour your work surface and roll out the puff pastry sheet to smooth out any creases.
Cut the pastry into 3-inch squares.
In a bowl, mix together the halved mozzarella, cherry tomatoes, chopped basil, and pesto. Season with salt and pepper.
Place a tablespoon of the filling in the center of each pastry square.
Fold each square over to form a triangle and press the edges with a fork to seal.
Brush the tops of the puff pastries with the egg wash.
Place the bites on a parchment-lined baking sheet and bake for about 15-20 minutes or until golden brown and puffed up.
Allow to cool for a couple of minutes before serving.
