Ingredients
12 ounces pasta (such as fettuccine or linguine)
2 tablespoons olive oil
2 medium leeks (white and light green parts only)
thinly sliced
8 ounces cremini mushrooms
sliced
3 cloves garlic
minced
1/2 cup dry white cooking broth (or vegetable stock)
1/2 cup heavy cream
1 cup shredded Gruyere cheese
1/4 teaspoon freshly ground black pepper
Salt
to taste
1/4 cup chopped fresh parsley (optional
for garnish)
Instructions
- In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the leeks and sauté until caramelized, about 8-10 minutes.
- Add the sliced mushrooms and cook for an additional 5 minutes until softened. Stir in the minced garlic and cook until fragrant, about 1 minute.
- Pour in the white cooking broth and bring to a simmer. Allow it to reduce slightly for about 2-3 minutes.
- Stir in the heavy cream and Gruyere cheese, mixing until the cheese is melted and the sauce is creamy. Season with black pepper and salt to taste.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. Cook for an additional minute to heat through.
- Serve hot, garnished with chopped parsley if desired.
Notes
Feel free to customize by adding protein such as chicken or tofu for a heartier meal. Leftovers can be reheated gently on the stove with a splash of broth to loosen the sauce.
