4 large onions, thinly sliced
3 medium potatoes, diced (about 1.5 lbs)
4 cups vegetable or chicken broth
2 tablespoons olive oil for caramelizing the onions

2 cloves garlic, minced

Instructions
In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the thinly sliced onions, sprinkle with a little salt, and stir to coat. Cook, stirring occasionally, for about 25-30 minutes until they’re deeply golden and sweetly fragrant.
Once your onions are beautifully caramelized, throw in the minced garlic and thyme. Cook for an additional minute until the garlic is aromatic but not browned.
Add the diced potatoes to the pot, stirring to mix everything together. Let them sauté for about 5 minutes.
