  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of all-purpose flour
  • Pinch of salt
  • 8 oz of cream cheese, softened
  • ½ cup of unsalted butter, softened
  • 4 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 12 tablespoons of milk (if needed for consistency)

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, combine vegetable oil, eggs, grated carrots, vanilla extract, and crushed pineapple. Mix well.
  • Gradually add the wet mixture to the dry ingredients and mix gently until just combined.
  • Divide the batter evenly between the two prepared pans and bake for about 25-30 minutes.
  • While the carrot cake layers are baking, beat cream cheese and sugar until smooth in a large mixing bowl. Add eggs one at a time, then stir in vanilla, flour, and salt until just combined.
  • After allowing carrot cakes to cool for 10 minutes, turn them out onto wire racks. Grease a 9-inch springform pan and pour the cheesecake batter into it. Bake at 325°F (160°C) for 45-50 minutes.
  • Allow cheesecake to cool for at least 4 hours or overnight.
  • To make the frosting, beat cream cheese and butter until fluffy, then gradually add powdered sugar and vanilla, mixing until smooth.
  • Assemble by placing one carrot cake layer on a serving plate, spreading frosting on top, then place the cheesecake layer followed by another layer of frosting. Top with the second carrot cake layer and cover the entire cake with remaining frosting.
