Charred Baby Bell Peppers with Burrata is a colorful and flavorful dish that combines the sweetness of roasted peppers with the creaminess of burrata and a zesty dressing.
Ingredients
1/4 cup
plus 3 tablespoons extra virgin olive oil
2 tablespoons honey
2 tablespoons roasted pistachios
finely chopped
juice of 1 lemon
2 tablespoons champagne or white wine vinegar
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh thyme
2 cloves garlic
grated
1 pinch each kosher salt
black pepper
and red pepper flakes
1 pound baby bell peppers
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1 loaf ciabatta bread
sliced
8 ounces burrata cheese
at room temperature
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix 1/4 cup olive oil, honey, lemon juice, champagne vinegar, basil, chives, thyme, grated garlic, salt, pepper, and red pepper flakes.
- Toss the baby bell peppers with remaining 3 tablespoons olive oil, smoked paprika, and chili powder. Spread them on a baking sheet.
- Roast the peppers in the oven for about 20-25 minutes or until charred and tender.
- While the peppers roast, toast the ciabatta bread slices in the oven until golden.
- Once the peppers are done, remove from the oven and drizzle with the prepared dressing, mixing to coat.
- Serve the charred peppers over the toasted ciabatta with burrata on the side. Drizzle with any remaining dressing before serving.
Notes
Feel free to substitute regular bell peppers if baby bell peppers are not available. You can adjust the amount of honey based on your sweetness preference.
