Ingredients
1 pound baby bell peppers
3 tablespoons extra virgin olive oil
1 tablespoon fresh chopped thyme
kosher salt and black pepper
1–2 cups Tzatziki sauce
1 block (6 ounces) feta
cut into 1/2 inch cubes
4 cloves garlic
smashed or sliced
1 lemon rind
1/2 cup fresh herbs (chopped basil
thyme + oregano sprigs)
black pepper and chili flakes
2 teaspoons honey
1/2 cup extra virgin olive oil
Instructions
- Preheat your grill or oven to medium-high heat.
- Toss the baby bell peppers with 3 tablespoons of olive oil, fresh thyme, kosher salt, and black pepper.
- Grill or roast the peppers until they are charred and tender, about 20-30 minutes.
- Meanwhile, prepare the marinated feta by combining the feta cubes, smashed garlic, lemon rind, fresh herbs, black pepper, chili flakes, honey, and 1/2 cup of olive oil in a bowl. Let it marinate for at least 15 minutes.
- Serve the charred peppers alongside the marinated feta and drizzle with tzatziki sauce.
Notes
Feel free to customize the herbs in the marinated feta according to your taste. You can also add more chili flakes for extra heat.
