12 cups Tzatziki sauce

1 block (6 ounces) feta

cut into 1/2 inch cubes

4 cloves garlic

smashed or sliced

1 lemon rind

1/2 cup fresh herbs (chopped basil

thyme + oregano sprigs)

black pepper and chili flakes

2 teaspoons honey

1/2 cup extra virgin olive oil


Instructions

  • Preheat your grill or oven to medium-high heat.
  • Toss the baby bell peppers with 3 tablespoons of olive oil, fresh thyme, kosher salt, and black pepper.
  • Grill or roast the peppers until they are charred and tender, about 20-30 minutes.
  • Meanwhile, prepare the marinated feta by combining the feta cubes, smashed garlic, lemon rind, fresh herbs, black pepper, chili flakes, honey, and 1/2 cup of olive oil in a bowl. Let it marinate for at least 15 minutes.
  • Serve the charred peppers alongside the marinated feta and drizzle with tzatziki sauce.
