Delicious and flaky Cheese and Spinach Stuffed Pastry that’s perfect for a snack or appetizer.
Ingredients

2 sheets puff pastry
thawed
2 cups fresh spinach
chopped
1 cup ricotta cheese
½ cup grated Parmesan cheese
1 teaspoon garlic powder or 2 fresh garlic cloves
minced
1 tablespoon olive oil
Salt and pepper to taste
1 egg
beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted. Remove from heat.
- In a bowl, mix together the ricotta cheese, Parmesan cheese, garlic, salt, and pepper. Add the wilted spinach and combine well.
- Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or circles, depending on your preference.
- Place a spoonful of the cheese and spinach mixture in the center of each pastry piece.
- Fold the pastry over to create a pocket or a half-moon shape, and seal the edges with a fork.
- Brush the tops with the beaten egg for a golden finish.
- Place the pastries on a lined baking sheet and bake for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
Feel free to add other herbs or spices to enhance the flavor. These pastries can be served warm or at room temperature.
