Ingredients

2 sheets puff pastry

thawed

2 cups fresh spinach

chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder or 2 fresh garlic cloves

minced

1 tablespoon olive oil

Salt and pepper to taste

1 egg

beaten (for egg wash)


Instructions

  • Preheat the oven to 400°F (200°C).
  • In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted. Remove from heat.
  • In a bowl, mix together the ricotta cheese, Parmesan cheese, garlic, salt, and pepper. Add the wilted spinach and combine well.
  • Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or circles, depending on your preference.
  • Place a spoonful of the cheese and spinach mixture in the center of each pastry piece.
  • Fold the pastry over to create a pocket or a half-moon shape, and seal the edges with a fork.
  • Brush the tops with the beaten egg for a golden finish.
  • Place the pastries on a lined baking sheet and bake for 20-25 minutes or until golden brown.
  • Remove from the oven and let cool slightly before serving.
