Cheeseburger Soup is the ultimate cozy comfort food packed with ground beef, tender vegetables, and creamy cheesy goodness—like a cheeseburger in a bowl.
Ingredients
1 lb ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup chopped celery
1 tsp dried basil
1 tsp dried parsley
4 tbsp butter (divided)
3 cups chicken broth
4 cups diced peeled potatoes
1/4 cup all-purpose flour
2 cups shredded cheddar cheese
1 1/2 cups milk
3/4 tsp salt
1/4 tsp pepper
1/4 cup sour cream
Instructions
1. In a large pot, brown ground beef over medium heat. Drain and set aside.
2. In the same pot, sauté onion, carrots, celery, basil, and parsley in 1 tbsp butter until vegetables are tender.
3. Add broth, potatoes, and beef. Bring to a boil, then reduce heat and simmer until potatoes are tender (10–12 minutes).
4. In a small skillet, melt remaining butter and whisk in flour. Cook and stir for 3–5 minutes until bubbly.
5. Gradually add the roux to the soup and bring to a boil. Cook and stir for 2 minutes.
6. Reduce heat to low. Stir in cheese, milk, salt, and pepper. Cook until cheese is melted.
7. Remove from heat and blend in sour cream. Serve warm.
Notes
Top with extra cheese or crumbled bacon for added flavor.
Use sharp cheddar for a bolder taste.
Store leftovers in the fridge for up to 3 days.
