This No-Bake Cheesecake Recipe is creamy, rich, and incredibly easy to make, perfect for impressing guests or enjoying a sweet treat at home.
Ingredients
16 full sheets of Graham crackers (about 2 cups crumbs)
1/4 cup packed light brown sugar
1/2 cup (8 TBS/ 1 stick) unsalted butter
melted
Pinch of salt
1 tablespoon gelatin powder
3 tablespoons water
1 1/3 cups heavy cream
24 ounces full-fat brick cream cheese
softened
1 cup granulated sugar
1/2 cup sour cream
at room temperature
1 tablespoon lemon juice
2 teaspoons pure vanilla extract
1/4 teaspoon salt
Instructions
- In a medium bowl, combine the Graham cracker crumbs, light brown sugar, melted butter, and a pinch of salt. Mix until well combined, then press the mixture firmly into the bottom of a springform pan to form the crust.
- In a small bowl, mix the gelatin powder with water and let it sit for about 5 minutes to bloom.
- In a large mixing bowl, whip the heavy cream until soft peaks form; set aside.
- In another mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar, sour cream, lemon juice, vanilla extract, and salt, mixing until well combined.
- Heat the bloomed gelatin mixture gently over low heat until dissolved, then stir it into the cream cheese mixture.
- Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.
- Pour the cheesecake filling over the prepared crust and smooth the top. Refrigerate for at least 4 hours, preferably overnight, until set.
- Once set, remove the cheesecake from the springform pan, slice, and serve. Enjoy!
