1 lb of ground beef
1 cup of cooked rice
1 can of black beans, rinsed and drained
1 cup of corn, frozen or canned, drained
1 small onion, diced
2 cloves of garlic, minced
1 packet of taco seasoning
1 cup of shredded cheese
Salt and pepper to taste
Optional toppings: Chopped fresh cilantro, Diced tomatoes, Avocado or guacamole, Greek yogurt or sour cream, Sliced jalapeños
Cook the rice according to package instructions until fluffy.
In a large skillet over medium heat, add oil and sauté the diced onion for 3-4 minutes. Add minced garlic and stir for 30 seconds.
Add the ground beef to the skillet, breaking it apart as it cooks until browned (about 5-7 minutes). Drain excess fat if necessary.
Sprinkle taco seasoning over the beef mixture, along with salt and pepper. Add a little water if desired. Stir and let simmer for a minute.
Stir in the black beans and corn into the beef mixture and cook for another 2-3 minutes. Adjust seasoning as needed.
In a large bowl, combine the cooked rice with the beef mixture. Mix well and divide into serving bowls.
Top each bowl with shredded cheese. Optional: use the broiler for a minute or two to melt the cheese.
Load the bowls with your favorite toppings such as cilantro and avocado.
