  • 1/2 cup shredded cheddar cheese

Instructions

  • Cook beef: In a large skillet, brown ground beef with onion and garlic. Drain excess fat.

  • Add sauce & tortellini: Stir in enchilada sauce and tortellini. Cover and simmer on medium-low for 6–8 minutes, until tortellini is tender.

  • Top with cheese: Sprinkle with cheddar and mozzarella. Cover and cook 2–3 more minutes until melted.
