2 large russet potatoes (about 1 pound) – peeled and cut into chunks
1 lb ground beef (or turkey for a lighter option)
1 small onion, finely chopped
2 cloves fresh garlic, minced
1 cup shredded cheddar cheese
1 teaspoon paprika
Salt and pepper to taste
1/2 cup all-purpose flour (plus additional for dusting)
1 egg

Instructions
In a large pot, add the chopped potatoes and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.
While the potatoes are cooking, heat a skillet over medium heat. Add the ground beef, onion, and garlic. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Stir in paprika, salt, and pepper. Remove from heat and mix in the shredded cheese until melted and combined.
Once the potatoes are cooled, transfer them to a mixing bowl. Mash with a fork or potato masher until smooth.
