Ingredients
• 2 cups cooked white rice
• 2 cups chopped broccoli (fresh or frozen)
• 1 tablespoon butter
• 1 small onion, finely chopped
• 1 can (10.5 oz) cream of mushroom or chicken soup
• 1/2 cup sour cream
• 1 1/2 cups shredded cheddar cheese
• Salt and pepper, to taste
• Optional: 1/4 tsp garlic powder, 1/4 tsp paprika
Instructions
1. Preheat oven to 350°F (175°C).
2. Steam or microwave broccoli until just tender.
3. In a skillet, melt butter and sauté onion until soft.
4. In a large bowl, combine cooked rice, broccoli, sautéed onion, soup, sour cream, and 1 cup of cheese. Season with salt, pepper, and optional spices.
5. Spread mixture into a greased 9×9-inch baking dish. Top with remaining 1/2 cup of cheese.
6. Bake for 25–30 minutes, or until hot and bubbly.
7. Let cool slightly before serving.
Notes
Use brown rice or quinoa for a healthier variation.
Add cooked chicken or turkey to make it a full meal.
To make ahead, assemble and refrigerate before baking.
