1 pound of Brussels sprouts, trimmed and halved
2 tablespoons of olive oil
Salt and pepper, to taste
2 cups of heavy cream
2 cups of shredded cheese (Gruyère and cheddar)
1 garlic clove, minced
1/2 teaspoon of nutmeg
1/2 cup of breadcrumbs
2 tablespoons of butter, melted
Instructions
Preheat the oven to 375°F (190°C).
Toss the trimmed and halved Brussels sprouts with olive oil, salt, and pepper. Spread them out on a baking sheet lined with parchment paper.
Roast the Brussels sprouts in the oven for about 20 minutes until tender and caramelized.
In a medium saucepan, combine heavy cream, minced garlic, and nutmeg over medium heat. Stir until it starts to steam. Gradually add 1 ½ cups of shredded cheese, mixing until melted and creamy.
Combine the roasted Brussels sprouts with the cheese sauce, stirring until well coated.
Transfer the mixture into a greased baking dish.
In a small bowl, mix the remaining ½ cup of cheese with the breadcrumbs and melted butter. Sprinkle this mixture over the Brussels sprouts.
Bake in the oven for 25-30 minutes until bubbling and golden on top.
Let it rest for about 5 minutes before serving.
