1 Tbsp. extra-virgin olive oil

1/2 cup chopped yellow onion or shallots

3 garlic cloves

2 cups lower-sodium chicken broth

1 cup whole milk

1 tsp. poultry seasoning

1 tsp. kosher salt

1 tsp. black pepper

1 cup shredded sharp cheddar cheese

divided

1 cup dry (uncooked) quinoa

1 lb. boneless skinless chicken breasts

4 cups broccoli florets


Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  • Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth and milk. Add the poultry seasoning, salt, and pepper, and bring to a simmer until thickened.
  • Remove from heat and stir in 3/4 cup of cheddar cheese, quinoa, cooked chicken, and broccoli florets until combined.
  • Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  • Allow to cool slightly before serving.

Notes
