Ingredients
2 Tbsp. butter
1 Tbsp. extra-virgin olive oil
1/2 cup chopped yellow onion or shallots
3 garlic cloves

3 Tbsp. all-purpose flour
2 cups lower-sodium chicken broth
1 cup whole milk
1 tsp. poultry seasoning
1 tsp. kosher salt

1 tsp. black pepper

1 cup shredded sharp cheddar cheese
divided
1 cup dry (uncooked) quinoa
1 lb. boneless skinless chicken breasts
4 cups broccoli florets
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt the butter and olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth and milk. Add the poultry seasoning, salt, and pepper, and bring to a simmer until thickened.
- Remove from heat and stir in 3/4 cup of cheddar cheese, quinoa, cooked chicken, and broccoli florets until combined.
- Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Allow to cool slightly before serving.
Notes
For added flavor, you can use a different type of cheese or add spices according to your taste. This dish can be made ahead of time and reheated before serving.
