1 cup cooked rice
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 ½ cups shredded cheddar cheese
1 cup frozen mixed vegetables
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup crushed buttery crackers
2 tablespoons butter, melted
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, 1 cup of cheddar cheese, and frozen mixed vegetables. Add garlic powder, onion powder, salt, and pepper. Stir to combine without overmixing.
Spray a 9×13 inch baking dish with non-stick spray and pour the mixture in, spreading it out evenly.
In a small bowl, mix crushed crackers with melted butter. Stir until coated and sprinkle over the casserole. Top with the remaining ½ cup of cheddar cheese.
