For the Meatloaf Layer:
- 1 ½ lbs ground beef (or turkey)
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- ½ cup onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- ½ tsp salt
- ½ tsp black pepper
- ½ cup ketchup
For the Mashed Potato Layer:
- 3 cups mashed potatoes (prepared ahead)
- ½ cup sour cream
- ¼ cup butter, melted
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
For Topping:
- 1 cup shredded cheddar cheese
- ½ cup crispy cooked bacon, crumbled
- 2 tbsp chopped green onions (optional)
Instructions

Preheat Oven & Prepare Meatloaf Layer:
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, and pepper.
- Press the mixture evenly into a greased 9×13-inch baking dish.

Bake the Meatloaf Base:
- Spread ketchup over the top of the meat mixture.
- Bake for 25 minutes or until the meat is mostly cooked through.

Prepare the Mashed Potatoes:
- Mix mashed potatoes with sour cream, melted butter, garlic powder, salt, and black pepper.
- Spread evenly over the partially cooked meatloaf base.

Add Toppings & Finish Baking:
- Sprinkle shredded cheese and crispy bacon on top.
- Bake for another 10-15 minutes, until cheese is melted and bubbly.

- Let cool for 5 minutes, garnish with green onions, and serve warm!
