For the Meatloaf Layer:

  • 1 ½ lbs ground beef (or turkey)
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • ½ cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup ketchup

For the Mashed Potato Layer:

  • 3 cups mashed potatoes (prepared ahead)
  • ½ cup sour cream
  • ¼ cup butter, melted
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

For Topping:

  • 1 cup shredded cheddar cheese
  • ½ cup crispy cooked bacon, crumbled
  • 2 tbsp chopped green onions (optional)

Instructions

  1. Preheat Oven & Prepare Meatloaf Layer:

    • Preheat oven to 375°F (190°C).
    • In a bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, salt, and pepper.
    • Press the mixture evenly into a greased 9×13-inch baking dish.
  2. Bake the Meatloaf Base:

    • Spread ketchup over the top of the meat mixture.
    • Bake for 25 minutes or until the meat is mostly cooked through.
  3. Prepare the Mashed Potatoes:

    • Mix mashed potatoes with sour cream, melted butter, garlic powder, salt, and black pepper.
    • Spread evenly over the partially cooked meatloaf base.
  4. Add Toppings & Finish Baking:

    • Sprinkle shredded cheese and crispy bacon on top.
    • Bake for another 10-15 minutes, until cheese is melted and bubbly.
  5. Serve & Enjoy:

    • Let cool for 5 minutes, garnish with green onions, and serve warm!
